Safety & Sanitation

This page not completed: Over cooking - I think it stems from our grandparents mortal fear of dieing if they ate anything that wasn't just cooked to death. Because of poor sanitation and no refrigeration in many cases they did get sick or die, so it was not an unfounded fear. With refrigeration, basic hand washing and sanitation we have alleviated these problems in general. My great grandfather was obsessed with dumping the contents of a can out the instant he had finished opening it. I never asked but would be quite certain he had a relative die from leaving food sit out in a can. So for him the food had to be in a bowl within seconds of opening the can. We don't need to be quite that obsessive. However, there is no substitute for good health and safety practices.

Safe Temperatures - Stop guessing, buy a good meat thermometer.
