Worlds Greatest Bread Machine Recipe

A good bread machine recipe is a wonderful thing. Just throw it in and walk away. In keeping with my theory that there is only one bread recipe and everything else is an alteration of that one "mother recipe" this is how it works. This recipe make a large variety of breads with just a tap of the magic wand, easy, easy.

Utensils: bread machine

Bread Machjine Recipe
8 oz warm water
1 tab sugar or 2 tab of honey
1 pkg dry yeast
2 cups unbleached bread flour - see note below
4 tab butter - softened or melted or safflower oil
2 tab dry milk
1½ tsp salt
Flavor alternative - 1 cup your favorite flour - see below - my new favorite combo; 1 cup of rolled oats, 1/2 cup chopped English walnuts, 2 tab of flax seed and 2 tab of honey

Directions

Put the ingredients in the order they are listed. Then start the machine - you are done. If you are using the bread for a dinner party try slicing the loaf length wise in half first then into bread slices. It is much easier to get a nice straight slice that way. Additionally, it makes a better presentation. Homemade bread is one of those items that slices much better with an electric knife, especially if you are wanting nice thin straight sandwich slices.

NOTE: There are 3 cups of flour total in this mix. The normal ratio to make a flavored bread is 2 cups of white wheat flour and one cup of an alternate flour. Swap out 1 cup of white flour with almost any other flour, or bread grain like oats, will produce a great loaf of bread. Nuts and grains do not rise, that is why for the oat bread and nut bread I add about a cup and a half.

Alternative Recipe Ideas

My Favorite Bread - favorite flour mix - 1 cup 5 grain mix (usually found in the baking isle) and 1/2 cup whole rolled oats. Plus 2 more tablespoons of honey. That equals the 3 cups of flour you need. For delayed start timer batches put all the liquid in the bottom, then the flour, then the remaining dry ingredients. This will stop the yeast from rising before it is kneaded. Of course for plain white bread make the third cup of flour unbleached white bread flour. Be creative.

  • Rye Bread - substitute 1 cup flour for 1 cup rye flour
  • Wheat Bread - substitute 1 cup flour for 1 cup whole wheat flour
  • Oat Bread - substitute 1 cup flour for 1 cup of rolled oats
  • Corn Bread - substitute 1 cup flour for 1 cup of corn meal
  • 5 Grain Bread - substitute 1 cup flour for 1½ cups of 5 or 7 grain mix, (Red Mill makes a very good one) plus 2 additional tablespoons of honey
  • Potato Bread - substitute the water with the water left after boiling potatoes and 2 heaping tab of leftover mashes potatoes, best if all 3 cups of flour are white flour
  • Nut Bread - a combination of sunflower seeds, chopped English walnuts, rolled oats and 2 more tablespoons of honey. About 2/3 cup nuts and 1/3 cup flour.
  • Other Bread - substitute 1 cup flour for 1 cup of almost any grain you like in bread or a combination of sunflower seeds, wheat berries, oats, millet, flax, etc
