Chicken Black Bean Taco Recipe

Who doesn't love tacos? This dish is so fast and easy plus a lot of protein. We made this for lunch many days even before Elizabeth got Alpha-gal.

Chicken Black Bean Tacos
1 chicken breast - cut into ˝" cubes
1 can black beans - rinsed and drained
1 sm red pepper - diced
1 tomato - diced
4 green onions - chopped
1 sm can sliced black olives
˝ cup lettuce - shredded
4 flour tortillas or about 6 taco shells
Your favorite hot sauce

Directions

Sauté the chicken, salt and pepper to taste. Add the black beans to the frying pan just as the chicken is done to heat them. Build your tacos, nachos or burritos as you desire. It is super fast and easy.

Alternative Recipe Ideas

  • Place it over tortilla chips nacho style.
  • Use approximately ˝ of shrimp in lieu of the chicken.
  • Add a non-dairy cheese.
