Turkey Sausage Recipe

This was developed for Alpha-gal allergies. What is Alpha-gal? We tried some store bought turkey sausage and quite frankly they taste like crap. So I make my own. These are very tasty, even your meat eaters will like them. Which prompts me to have to vent a little here - Why do manufactures think that speciality diet foods ore health foods have to taste like crap so that the consumers will think that they are actually healthy?

Servings: 6     Prep time: 15 min     Cooking time: 10 to 12 min
    Ready to eat in: 25 to 30 min
Utensils: Mixing bowel, plastic gloves, cookie sheet

Turkey Sausage
1 lb ground turkey
2 heaping tsp ground sage
1 clove garlic - minced
½1 tsp salt
½ tsp fresh ground pepper
¾ tsp red pepper flakes
½ tsp celery salt
½ tsp cumin

Directions

I suggest making 2 to 4 batches of sausage patties and freezing the patties for a quick breakfast item. After mixing, form into patties and place on a cookie sheet. Freeze and remove to a zip top baggie. Remove the quantity you need the night before and defrost in the refrigerator.

Place all the ingredients in a mixing bowl and kneed until mixed well. Form into six balls and press out into patties. They cook better if they are thin. Freeze ahead or fry for breakfast

Alternative Recipe Ideas

  • Add diced red and green peppers and diced onions.
  • Add a little maple syrup, although I am not a fan of syrup in sausage some people love it.
  • Add a little liquid smoke.
