Fried Banana Bread

This is a very simple dessert to make for a small dinner party. Make the banana bread ahead and the sauce comes together quickly... your guest will be very impressed. The flavor here is delicious. What is Alpha-gal? The sauce recipe is for 4, but the loaf will make 8 servings easy.

    Ready to eat in: 1 hr 15 min, plus 15 min to cool, plus 10 min for the sauce
Utensils: mixer, mixing bowl, 9 x 5 bread pan, non-stick frying pan

Fried Banana Bread
Batter
2 sticks Earth Balance or butter - softened
¾ cup brown sugar
2 lg eggs
1 tsp vanilla
½ tsp baking soda
½ tsp baking powder
½ tsp sea salt
2 cups flour
½ cups chopped English walnuts
3 ripe bananas - peeled and sliced
 
Banana Sauce
2 or 3 bananas - peel and slice on a bias about ½ inch thick
2 pinches ground cinnamon
¼ cup Earth Balance or unsalted butter
½ cup brandy
½ cup Ameretto

Directions

Bread - Blend the butter and sugar until smooth. Add each of the remaining ingredients one at a time and beat for an additional minute. Pour into a greased 5 by 9 bread pan and bake at 350º F for 1 hr or until a toothpick comes out clean. Cool, slice just prior to frying. To fry spread a small amount of Earth Balance or butter on both sides and fry on both sides until a slightly brown and crisp layer develops. Remove to warm oven while preparing the bananas.

Sauce - In a non-stick skillet melt the Earth Balance and toss in the bananas and cinnamon. Toss for about 45 seconds at low heat. Turn off heat and add the brandy and Ameretto. Toss the mixture and stir to blend. Spoon over the fried banana bread and ice cream. Serve with a scoop of vanilla ice cream. Homemade almond milk ice cream recipe .

Alternative Recipe Ideas

  • For a professional look; dust with powdered sugar, garnish with mint or raspberries.
  • Also good with pecan praline ice cream.
  • Substitute dark rum for the Ameretto and brandy for a slightly different taste.
  • If you do not drink - alcohol evaporates very quickly and you are only left with the flavor, however you can substitute a non-alcoholic coffee liquor like DaVinci syrup or use butter and a little brown sugar to make a syrup, pancake syrup is also an alternate.
