Oatmeal Raisin Cookies

Worlds best, if I do say so myself.

Servings: about 36 cookies     Prep time: 15 min     Cooking time: 8 to 11 min per batch
    Ready to eat in: 1 hr
Utensils: Mixing bowl, cookie sheet, mixer, spatula, large spoon or cookie scoop, cooling rack

Farm
2 lg eggs - beaten
1 tsp vanilla extract
¾ c butter - softened
¾ c white sugar
¾ c dark brown sugar
¾ tsp cinnamon
½ tsp sea salt
1 tsp baking soda
2 tab hot water
1¼ c flour
1¼ c raisins
¼ c pecans - chopped fine
3 c rolled oats - NOT instant

Directions

Pre-heat oven to 375º F. Beat eggs together then beat eggs, vanilla, butter, sugar, cinnamon, salt, soda and water until blended well. Fold in the flour, then the raisins and nuts. Then fold in the oats. Spoon onto greased cookie sheet or parchment. Makes about 3 sheets of 12 each. Bake from 8 to 11 min.
