Peach Cobbler with Sourdough Topping

Peach Cobbler using Sourdough starter, two wonderful ideas brought together. Sourdough starter is a nice product to have around, but you need new ideas to keep from eating applesauce coffee cake or banana bread every week. This recipe works just as good for cherries in June and apples in October as it does for peaches in July. Give it a try with any fresh fruit and don't forget the vanilla ice cream.

Servings: 16     Prep time: 45 min     Cooking time: 1 hr
Utensils: 9 x 13 deep baking dish, large mixing bowl, electric mixer

Peach Cobbler
Fruit Filling
10 to 14 peaches depending upon size - peeled and seeded
½ cup brown sugar; 1 cup if fruit is tart
½ tea vanilla
dash salt
½ tsp nutmeg
½ tsp cinnamon
 
Sourdough Batter
2 cups flour
1 cup sugar
½ tsp vanilla
2 beaten eggs
¼ cup melted butter
dash salt
½ tsp allspice
½ tsp baking powder
½ tsp baking soda
2 cups of sourdough starter
water if needed
 
Topping
1 cup chopped pecans or walnuts
caramel topping

Directions

Wash, peel, pit and slice the peaches into the baking dish. Slice enough to have a heavy layer in the dish. Stir in the other fruit filling ingredients and make a nice even layer in the bottom of the baking dish.

In a mixing bowl combine all of the batter ingredients and mix until smooth. Depending on your sourdough you may have to add a little water to the mix. Look for a thick cake mix like consistency. Pour over the fruit. Top with chopped nuts and drizzle caramel in a thin stream in a circular pattern over the top. Bake at 350° F for 45 min to 1 hour or until the center is done.

Alternative Recipe Ideas

  • Substitute the peaches for - apples, cherries, strawberries, rhubarb, apricots, gooseberries, blueberries, blackberries, pears or a combination of your favorite fresh fruits.
  • The batter can go on the bottom for a change.
