Breakfast Burrito for Alpha-gal

We like breakfast any time so at least one a week we eat breakfast for supper. Plus it is super fast. This is yummy for brunch, lunch or any time. Remember garbanzo beans are a good source of protein when you can't eat meat. What is Alpha-gal?

Servings: 2     Prep time: 5 min     Cooking time: 10 min
    Ready to eat in: 15 min
Utensils: Frying pan

Breakfast burrito
5 or 6 mushrooms - sliced
Earth Balance butter substitute
¼ c garbanzo beans - rinsed and drained
4 eggs
salt & pepper - to taste
¼ c cheese non-dairy cheese
2 large tortillas - heated
hot sauce or jalapeñoes - to taste


Slice and dice the mushrooms and sauté in Earth Balance. Add the eggs, garbanzo beans, salt & pepper. Toss all into a scramble. Add the cheese and turn off the heat. Allow to sit for a moment to soften the cheese while heating the tortillas. Divide the filling between the two tortillas and roll burrito style. Serve your favorite salsa.

Alternative Recipe Ideas

  • 2 green onions - chopped
  • red or green pepper - diced
  • For Sunday brunch serve with a side salad of lettuce, tomato and guacamole
