Huervos Rancheros - Red

Utensils: Large skillet with lid

Huevos Rancheros
½ small white onion - chopped
2 cloves garlic - minced
1 can fire roasted tomatoes - diced
1 sm can tomato sauce
1 can garbanzo beans - drain & rinse
salt & pepper to taste
1 tsp cumin
Jalapeños or cayenne to taste
¼ cup water
4 eggs
1 cup shredded cheese

Directions

Chop the onions and garlic and sauté in a little butter until softened. Add fire roasted tomatoes if you have them, if not regular diced tomatoes will do. Add everything except the eggs and cheese. Simmer sauce for a few minutes to blend the flavors. Crack the eggs in the sauce to poach. Cover and cook at a low simmer until the eggs are poached hard or soft to taste. Turn off burner add shredded cheese and cover until cheese is melted.

Alternative Recipe Ideas

  • Add a few black olives
  • Substitute a can of drained chili beans for the garbanzo beans
  • Diced ham or crumbled bacon
  • Serve with a side of sour cream or guacamole
