Alpha-gal Shrimp Curry

This is one of my "One Pot Meals" it is fast and easy and also developed for Alpha-gal allergies. What is Alpha-gal? Curry is a wonderful spice we don't use enough of in the US. Give it a try.

Servings: 4     Prep time: 15 min     Cooking time: 45 min
    Ready to eat in: 1 hr
Utensils: Rice cooker

Shrimp Curry
1½ c long grain rice
1 tsp sea salt
1½ c chicken or vegetable broth
1½ c water
1 lb shrimp - peeled and devained, remove tails
1 small onion - sliced
1 c frozen sugar snaps
1 c frozen peas
2 med carrots - julienne cut or diced
3 tsp curry powder
1 tsp sugar
½ can coconut milk
cayenne pepper - to taste
½ to 1 tsp more sea salt - to taste

Directions

Add all ingredients except the coconut milk to rice cooker. Cook until the rice is done. stir in the coconut milk, season to your taste, but it should be spicy. Let stand a few min to heat the coconut milk and blend the flavors.

Alternative Recipe Ideas

  • Substitute fish or chicken for shrimp. Chicken should be cook first.
