Chicken Potato Dinner

A slight twist on some old favorites. What is Alpha-gal?

Utensils: Large casserole pan

Chicken Potato Dinner
3 cups sweet potatoes - cubed or diced
3 cups white potatoes - cubed or diced
1 lg onion - course chopped
cup olive oil
1 tab balsamic vinegar
tsp cinnamon
1 orange juiced and zest
tsp thyme
several whole cloves garlic - cut in half
4 servings of chicken - boneless breast or bone in pieces
2 tsp olive oil
1 tab spicy brown mustard
1 tab soy sauce
1 clove garlic - minced
sea salt and pepper to taste


Cut up the potatoes and onion. Mix all the ingredients for the potatoes and toss the potatoes in the mix. Place the potatoes in the casserole pan in an even layer. Mix all the ingredients for the chicken and brush on the chicken. Place the chicken evenly on top of the potatoes, pour any extra sauce on top of the chicken. Bake at 350 F for one hour or until chicken is fully cooked and potatoes are tender.
