10 Minute Pasta Lunch

Thinking ahead just a little can save you a lot of time later. In the summer we eat a number of cold pasta salads made with our fresh vegetables. They are very quick, nutritious and not extremely heavy. While eating breakfast put on a pot of pasta water and cook the pasta so it will be all ready at lunch. Then it only takes about 10 min to put the whole thing together.

Servings: 8 to 10     Prep time: 10 min     Cooking time: 20 min
    Ready to eat in: 30 min
Utensils: stock pot, large mixing bowl, colander

Pasta & Kielbasa
3 cup cook pasta of your choice - tri-color or zeta are good choices
1 smoked sausage - Kielbasa or other pre cooked sausage
½ cup vinegar & oil style dressing - your favorite
1 can kidney beans - drained & rinsed
1 can black olives - drained
1 cup cheese - cubed any kind
¾ cup onion - chopped red or green
2 cloves garlic - minced
1 can diced tomatoes - roasted if you have them
Salt & pepper to taste

Directions

Cook your favorite style of pasta, drain, rinse with cold water and toss with the oil. Add the salt and pepper and refrigerate until lunch. Just dump all the other ingredients in the mixing bowl, toss and serve. I do like to sauté the sausage just a little because I think it adds a good flavor, but with a pre-cook sausage this is not necessary.
