Pesto Chicken 15 min Dinner Idea

You can latterly prepare dinner in 15 min. It is all about planing ahead and having a system. When I make rice, pasta or potatoes I always make enough for two or three meals. As an example we make rice today then skip a day and have the rice on the third day. In this case we made rice with brown lentils two days ago. I mixed them with some peas and carrots and micro-waved them while the chicken sautéed. Any frozen vegetable is quick and works well when re-heating rice or pasta. Add a quick salad and you have a full meal in minutes.

Pesto Chicken

Servings: 2     Prep time: 5 min     Cooking time: 10 min
    Ready to eat in: 15 min
Utensils: Frying pan

1 or 2 chicken breast - sliced in strips about ½ thick
Olive oil for frying
salt & pepper to taste
½ tsp minced garlic
6 tsp creamy pesto sauce
lemon juice

Directions

Slice chicken breast in long ½ thick strips. Season the chicken and sauté with the garlic. When cooked turn off heat and spoon the pesto sauce on top of the chicken and drizzle with lemon juice. Let stand about a minute to heat the pesto. Spoon the pan drippings over the chicken when served.
