Kickin' Grilled Cheese

To go with the Kickin' Tomato Soup recipe. Not every meal needs to be a production; most of the time we want it fast and now. This places grilled cheese in its own world. Just good old comfort food for a cold day.

Servings: 2     Prep time: 5 min     Cooking time: 10 min
Utensils: frying pan or grilled cheese machine

Kickin' Grilled Cheese Sandwich
4 slices - oat or multi grain bread
4 to 8 slices of cheese - Mix your favorites - American, pepper Jack, Swiss, cheddar, mozzarella
Roasted red peppers - cut into strips
10 asparagus spears - coked or canned


Spread mayo on all 4 slices, arrange the asparagus, red peppers and cheese, spears. Spread a little butter on the outside of each slice and grill either in a frying pan or a grilled cheese maker.

Alternative Recipe Ideas

Try your favorite ingredients:

  • A sprinkle of Parmesan inside the sandwich
  • Asparagus, red peppers and onions
  • Bacon, also try thin slices of pear or apple with the bacon
  • Grilled onions
  • Sliced tomato
  • Grilled mushrooms
  • Ham
  • Black olives
