Borlotti Beans

Yes, I never heard of them either, until Elizabeth found them in a seed catalogue, but boy are they good. This recipe will also work for most white beans. See if you can find some Borlotties and give them a whirl.

Servings: 4 to 8     Prep time: 1 hr     Cooking time: 30 min
Utensils: Large skillet

Borlotti Beans on the Vine
2 cups fresh Borlotti beans
1 cup chicken broth
1 small onion - diced
1 med tomato - diced
1 med potato - diced
1 tsp sea salt
½ tsp fresh ground pepper
8 to 10 fresh basil leaves
water
Gorgonzola cheese crumbles - topping

Directions

This recipe is for fresh beans, for dried beans soak in cold salted water overnight, and drain. Add a tsp of apple cider vinegar to the soaking beans, it makes them fore digestible. Add all of the ingredients except the cheese to a large skillet of sauce pan. Simmer on high until the potatoes and beans are tender. Add water as required to keep the mix from boiling dry. Add the cheese just before serving or on the table. Note: if you are using a dried bean boil them in water until tender before making the dish.
