Curried Lentils & Rice

If you are tired of the same old side dish here is a nice change. Also, when lentils are combined with rice it is a complete protein source.

Servings: 4 to 6     Prep time: 15 min     Cooking time: 40 min
Utensils: Rice cooker

3 cups chicken broth
cup water
1 cups brown lentils
1 cups whole grain rice
1 tsp salt
3 cloves garlic - minced
1 sm onion - diced
tsp tumaric
1 tsp curry
1 or 2 dashs cayenne - to taste


Place all of the ingredients into a rice cooker or in a stove top pot. Bring to a boil for 1 min and reduce to very low until all the liquid is absorbed.

Alternative Recipe Ideas

  • You can leave out the cayenne or up it for a spicy dish.
  • Add carrots or celery.
  • Add cooked chicken, smoked sausage or beef for a full one pot meal.
