Quinoa

Quinoa is a very flavorful grain and it is the most complete protein of all the grains. This dish is very unique. It will make a great addition to your dinner party. This is also spicy enough it will compliment more bland dishes like fish. Because it is such a complete protein it is an excellent vegetarian meal.

Servings: 6 to 8     Prep time: 30 min     Cooking time: 15 min
Utensils: Large skillet with lid

½ med onion - diced
½ med red pepper - diced
2 cloves garlic - minced
1 lg carrot - diced small
1 ¾ cup beef or vegetable broth
½ tsp sea salt
½ tsp pepper fresh ground
2 tab butter
½ tsp ground coriander
¼ tsp celery seed
1 tab Caribbean Jerk Seasoning
½ tsp smoked paprika
red pepper flakes - to taste (optional)
1 cup Quinoa - pronounced (kĭ-nō'ə, kēn'wä)

Directions

Rinse quinoa in strainer. In a skillet melt butter and sauté onion, pepper, garlic and carrot until softened. Add beef broth and remaining ingredients, bring to a boil, add quinoa, stir, cover and turn heat off. Quinoa cooks just like rice only in half the time, about 15 min. When it has absorbed the water fluff and serve.

Alternative Recipe Ideas

  • Jerk seasoning has some red pepper flakes in it, for a bolder flavor add more.
  • This recipe is also great tossed with any cooked vegetable: peas, broccoli, zucchini or mixed veggies
  • Add cubed ham or smoked sausage.
  • Quinoa is also good chilled as a picnic salad.
