Spicy Cole Slaw

We like it with a little kick. This goes really good with fish or on a sandwich where you want to add a little kick to something that is usually bland.

Servings: 12     Prep time: 30 min     Cooking time: 0 min
    Ready to eat in: 1 hr
Utensils: Large mixing bowl, vegetable grater

1 med head cabbage - finely chopped or grated
3 carrots - peeled and grated
1 sm red onion - finely diced
cup red cabbage - finely chopped (optional)
1 sm green pepper - finely chopped
cup mayonnaise - more or less to taste
2 tsp yellow mustard
3 tab white salad vinegar
tsp sea salt
1 tsp celery seeds
1 tsp fresh ground pepper
3 to 6 dashes of cayenne pepper - to taste

Directions

Shred of finely dice all the vegetables and then fold in all of the condiments and spices. Chill for at least 30 min before serving. Add more or less mayo depending upon your personal preference.

Alternative Recipe Ideas

  • Slaw can be made with zucchini, substitute zucchini for the green cabbage.
