Vadalia Onion Salad

A great salad for a picnic. Make ahead, keeps well. A great alternative to taking baked beans - again.

Servings: 6 to 8     Prep time: 25 min     Cooking time: 10 min
Utensils: Frying pan, 1 quart serving dish

1 Kielbasa sausage - sliced and sautéed
8 med mushrooms - sliced
1/2 Vadalia onion - sliced in spears
1/2 ea red and green peppers - julienne sliced
1/2 cup Velveeta cheese - cubed
2 roma tomatoes - diced


1/4 cup honey mustard dressing
1 tsp sugar
1 tsp lemon pepper


Sauté sausage and let cool, slice all vegetables and toss with dressing. Chill for 1 hour or more. Best if made the day before so the flavors meld together.

Alternative Recipe Ideas

  • Black olives.
  • Cucumber - peeled and cubed, this does not keep as well.
  • Fresh chives or thyme from the garden.
