12 Bean Soup

This can be used as Vegan or Vegetarian bean soup or add a little meat to make it even heartier. The home canned tomatoes and peppers are what really set this soup off. What is Alpha-gal?

Servings: 8 - 10     Prep time: 30 min     Cooking time: 4 - 6 hours
    Ready to eat in: 6 hours - plus requires soaking overnight
Utensils: Crock pot

12 Bean Soup
2 cups 12 bean soup mix dryed beans
1 qt canned tomatoes with juice
3 tsp sea salt
1 tsp fresh ground pepper
1 tsp thyme or several sprigs of fresh thyme
1 large onion - diced
2 stalks celery - bias cut
2 carrots - grated
1 tsp garlic - minced
2 bay leaves
½ cup roasted peppers - diced
1 tsp cumin
water to cover

Directions

Rinse beans and soak in salted water and one tsp vinega overnight. Drain and rinse again. Add everything to crock pot and add enough water to cover everything well. Cook on high 3 hours and turn to low for at least one more hour. Three more hours at low is best. Serve with cheese and crackers or homemade wheat bread.
