Sautéed Asparagus with Red Peppers & Capers

What a great side dish for company. If you like asparagus you are going to love this one.

Utensils: frying pan

Asparagus with Red Peppers and Capers Recipe
1 large red pepper - julienne cut
1 leek - julienne cut
4 large cloves of garlic - minced
1 tab olive oil
24 asparagus stalks
sea salt & fresh ground pepper
1 tab butter
2 tab capers
4 shots of Bragg Liquid Aminos seasoning or Tamarin Soy Sauce

Directions

Sauté red peppers, leeks and garlic in olive oil until the leeks start to get tender. Add the asparagus and butter, sprinkle with a little salt and pepper. Not too much the soy will make it salty. Sauté about 3 min, keep them crunchy. Turn heat off and toss with capers and Bragg seasoning. Serve or remove to oven immediately.

Alternative Recipe Ideas

For dinner with the family I just serve this straight out of the skillet, but for a dinner party; place the asparagus on a oven proof serving platter or in a chaffing dish. Arrange the leek and pepper sauté decoratively on or around the asparagus. Place in a warm oven until dinner is ready.
