Oatmeal Raisin Cookies

These cookies are so good you won't care that they can be made dairy free and gluten free.

Servings: 4 doz     Prep time: 15 min     Cooking time: 10-11 min per batch
    Ready to eat in: 10 min cooling
Utensils: cookie sheet, mixing bowl, mixer, spatula, oven mitts

Oatmeal Raisin Cookies
2 cups sugar
2 cups flour - or coconut flour
4 cups oats - gluten free
1½ cups raisins
½ cup pecans - chopped
½ tsp salt
1 tsp baking soda
1 cup safflower oil
3 tab Earth Balance Butter or butter
2 tab molasses
2 eggs
1½ tsp vanilla
3 tab coconut milk - or milk

Directions

Pre-heat oven to 375º F. Beat eggs together then beat eggs, vanilla, butter, sugar, cinnamon, salt, soda and water until blended well. Fold in the flour, then the raisins and nuts. Then fold in the oats. Spoon onto greased cookie sheet or parchment. Makes about 4 sheets of 12 each. Bake from 8 to 11 min.

Alternative Recipe Ideas

  • Use chocolate chips in place of the raisins.
  • Use craisins place of the raisins or half & half.
